Chickpea Sandwhich
Ingredients Needed:
- One can of chickpeas. $0.98
- Dill weed. $2.36
- Wheat bread. $2.88
- Chips. $3.98
Total Cost: $10.20
- Use a can opener to open can of chickpeas. Drain liquid from can of chickpeas by pressing top of can inside to squeeze the liquid out.
- Pour chickpeas in a bowl and mash them until they are a spreadable consistency.
- Add 1 teaspoon of dill weed seasoning and mix again.
- Put slices of bread in toaster or leave untoasted.
- Spread mixture onto slices of bread.
- Enjoy!
Rice & Beans with Fried Plantain and Peppers
Ingredients Needed:
- Jasmine Rice. $5.00
- A can of beans (black, kidney, or pinto). $0.98
- Plantain. Price varies – sometimes they have a 3 for $1.00 sale.
- Yellow, orange, and red peppers. $3.99
- Vegetable Oil. $4.86
Total Cost: $15.83
- Open can of beans a drain liquid out by pressing the separated lid down in the can. Then, pour can of beans in pot with two cups of water and leave on medium heat until it comes to a boil (you can add seasonings as well such as sazon, goya adobo seasoning, garlic, oil/butter, and thyme).
- Add rice to beans mixture.
- Clean and chop peppers into small cubes.
- Add them to a skillet pan with oil and sauté on medium heat until they are completely sautéed.
- Peel and cut plantain and add oil to pot.
- Once the oil is warmed up, add plantain and fry until crispy. Then place cooked plantain on paper towels to soak up the oil.
- Add peppers to the finished rice and beans mixture.
- Enjoy!
Veggie StirFry
Ingredients Needed
- White Rice. $5.00
- Broccoli (frozen). $0.85
- Peas (frozen). $0.85
- Carrots (frozen). $0.85
- Teriyaki Sauce. $2.97
Total Cost: $10.52
- Boil 1 cup of water and ½ cup of rice in pan on medium heat.
- Pour all frozen vegetables in a sauce pan on medium heat with a cup of water.
- After 10 minutes of cooking the vegetables, add teriyaki sauce (you can add vegan butter and sesame seeds for extra flavor).
- After rice is done pour vegetables on top.
- Enjoy!
